Biscotti

Last night I made chocolate Biscotti. Its easy as long as you follow the recipe, but it takes a really long time. Here are the ingredients.
You will need:

2 1/2 cups flour
1 1/2 teaspoons baking powder
Half a teaspoon salt
Half a cup (one stick) unsalted butter
One and a fourth cups sugar
Two large eggs
Two tablespoons coco powder

Position racks in the center and top third of the oven and preheat the oven to 300 degrees Farenheit. Line two large baking sheets with parchment paper or lightly butter them.

Combine flour, baking powder, coco powder, and salt. Put this mixture aside.

Beat butter and sugar on low speed about one minute, then one at a time beat in eggs. Add the flour mixture. Blend until combined

Split dough in half on a lightly floured surface. Roll each piece under your hands into a log shape until about 14". long. Place log on each sheet.

Bake for 45 minutes then turn and bake another 45 minutes. Take out of oven and cut. Slide the parchment paper with the logs on cutting board use a serrated knife cut the Biscotti into half inch thick slices. Arrange on baking sheet laying flat.

Bake about ten minutes .Transfer to wire cooling racks and cool completely (can be stored for up to two weeks)

enjoy!
